Mushroom lentil burger for the win!

Today I wanted to show you how to make a quick and easy plant-based recipe to supercharge your mood by using simple, affordable plant-based ingredients.

Join me in my kitchen, as I show you exactly how to make a mouth watering mushroom lentil burger. This burger was inspired by Buffy from @begoodorganics and her partnership with @CeresOrganics who provided many of their wonderful organic ingredients here today to help us create the most mouth watering scrumptious plant-based burger. 

Burgers don’t need to be all about the meat, these dense morish burgers will convert even the most ravenous carnivorous member of your family. Serve them inside a whole grain bun or if for gluten free members or those on a weight loss mission, iceberg lettuce leaves.

Recipe:

Mushroom lentil burger.

1 tablespoon of coconut oil.

1 onion, diced

4 tablespoons of garlic powder

250 grams of mushrooms, sliced.

A pinch of chili powder,

1 teaspoon of thyme,

1 can have brown lentils (drained).

2 large handfuls of parsley.

1/2 cup flour,

2 tablespoons of ground flaxseed,

2 tablespoons of tomato paste,

2 tablespoon of Miwo

1 1/2 teaspoons of sea salt.

Step one;

Preheat the oven to 180 degrees fan bake.

Step two;

In a pan over medium heat add coconut oil and cook, onions, garlic, and mushrooms. Then mix in herbes and chili and take off the heat.

Step three;

Add to a food processor, the remaining ingredients, reserving a quarter of the lentils. Blitz until blended but if there is still some texture then add the rest of the lentils and mix through.

Step four;

Spoon heaped half-cup measures onto a lined baking tray and shape into 4 patties. Bake for 45 minutes.

Step five;

To serve, cut up the lettuce cups, add the mushroom and lentil patties and layer with your fillings. I went with tomato, red onion, mayo, relish and gherkins. And you are welcome to add an optional side of baked potato chips or kumara chips. For Zac’s burger he needed a bun inorder to fill him up and he doesn’t like gherkins so I had his share. It is up to you but whatever you decide I know you will definitely enjoy.
