Mint Seed Slice

Zac and I both have a mega sweet tooth. It’s boarder line terrible!! One of our favourite treats are those yummy chocolate mint biscuits and we could easily eat a packet a week! Therefore, I wanted to try and find a healther replacement and even through this reciepe contains maple syrup, I thoughts surrely it has to be better for us?

I started with the following ingrediants…

A bag of nibble mix, vanilla and mint essence, maple syrup and a salt. I didn’t really measure the ingrediants at all but by memory, the whole bag including a few chocolate chips of nibble mix, 1 teaspoon of vanillia and 2 teaspoons of mint essance, a pinch of salt and then a few table spoons of mayple syrup until it looked sticky enough.

After mixing it all together in a bowl I sprayed one of our only two oven plates, poured in the mixture and flattend with a spoon.

I baked it in the oven at 180 degrees for about 15 minutes, and let it set in the fridge for 30 minutes. It then became very stiff and I was worried I wasn’t going to be able to cut it, but it wasn’t burnt or over cooked, it was simply a matter of cutting through the nuts, which I realised is very normal.

The result was amazing and as you can see when the big man arrived home, the slice didn’t last long at all!!!

I think due to adding mint essence, it tricked our minds into thinking we were eating mint chocolate biscuits? Regardless, I will 100% be making this quick and easy slice again and I hope it inspires you to do the same.
